You need to verify your thermometer. Fill a glass full of ice
and add cold water. Let it sit a few minutes until the temperature
stabilizes. Measure the temp. If you don't get 32 F it's not working
properly. You can also use boiling water and check for 212 F (at
sea level). It doesn't have to be perfect but it should be close
and it should be consistent.

They do break. I check mine a few times a month.
