Lemon Potatoes
6 medium potatoes cut in quarters
juice from 2 lemons
1/2 cup extra virgin olive oil
1 tbs oregano
Salt & pepper to taste
1 cup water
In a 9x12 baking pan arrange the cut potatoes. Add in
lemon juice. Salt and pepper generously. Rub in the
oregano and olive oil, mix well. Add in the water. Bake
at 375 until potatoes are just golden. Approx 1 hr.
Serves 4.
