I do both sides it is better. If you don't the bottom gets over done It also
seals the other side where you put toppings. I use mine for everything like
this. I make Quesadilas (forgive mispelling), Tortillas and so on. I don't
think I've found anything I can't cook with my Genesis. Well eggs,
spaghetti, so on (keep falling through) ;-)
