DEEP DARK CHOCOLATE CAKE
DEEP DARK CHOCOLATE CAKE
1-3/4 cups flour
2 cups sugar
3/4 cup cocoa
1-1/2 tsp. baking soda
1-1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp. vanilla
1 cup BOILING water
Combine flour, sugar, cocoa, soda, powder, salt and cinnamon in large
mixing bowl. Add eggs, milk, oil and vanilla. Beat at medium speed
for 2 minutes. Stir in boiling water (batter will be very thin).
Pour in (2) 9" , (3) 8" or (1) 13"x9" baking pan(s), or 1 Bundt pan,
either greased and floured or sprayed with Baker's Joy. Bake at 350
for 30-35 minutes for layers or 35-40 minutes for larger pans, or
until tested clean. Cool on rack for 10 minutes, then remove from
pan(s) and cool completely. Frost when cool. Sometimes I just glaze
it with white chocolate glaze:
12 oz. pkg. white chocolate chips
1/3 cup powdered sugar
1/4 cup shortening
Melt all together and pour over cooled cake.
