Mum's No Cook Fudge Cake
Dad loved morning tea, afternoon tea, and supper and insisted on
a variety of things to eat, so Mum always had several tins of baked
goods on hand. This chocolate fudge cake was one of her regulars
and good for using up cookies that are a bit stale, too.
4 oz or 1/2 cup butter
3 oz. or about 2/3 cup icing/powdered sugar
1 egg
1 1/2 tbsp cocoa powder
1/4 tsp vanilla
1 cup walnuts or pecans, broken or chopped
7 oz. "wine biscuits" (or any plain, not too sweet cookie. Wine
biscuits are plain, thin, slightly sweet vanilla cookies with imprinted
designs and a texture about similar to some graham crackers, so I
guess you could use them if you can't get "Nice" biscuits or wine
biscuits or some plain, vanilla cookie.)- break roughly or put in
a plastic bag and run a rolling pin over them several times to get
some crumbs and some pieces about the size of a quarter
Melt butter, add sugar, cocoa and slightly beaten egg. Add chopped
nuts and biscuits broken in pieces. Add vanilla and spread in a
7x11 sponge tin. Press in well. Leave 24 hours in a cool place.
Ice with chocolate icing, if liked.
Variations- you could use chopped almonds and some almond
essence, or put in chopped glace cherries. A few mini-marshmallows
might go well. When you cut the bars, you should see the odd
bit of biscuit amongst the chocolate.
