If you're going to shop for several meals at a time, it would be
worthwhile to invest just a little bit of time as soon as you bring the
stuff home to prep and properly store what you bought. For example,
divide the 2 lb. package of ground beef, wrap it in plastic wrap, put
it in a freezer bag and freeze it. Thus it doesn't incur the extra
day(s) of above-freezing storage. You didn't mention vegetables, but
the same principle applies--clean them, package them properly and
refrigerate them to extend their storage life. Leafy greens and
mushrooms, for example, will do better with a paper towel in the
(tightly closed) plastic sack.
As to the ground beef, wait another minute or two and someone will tell
you that it's a lost cause anyway because you didn't buy a piece of
boneless chuck to grind yourself. (He's not wrong, but he exaggerates)
