also known as kerisik, it's the white meaty/fleshy parts of the coconut,
grate it & fry it in a fry pan w/o oil till lightly brown, remove & wait for
it to cool before pounding. Or you can also fry desiccated coconut for the
same effect. Kerisik is used as a thickner as well as a flavour enhancer or
to make it more 'coconuty' in flavour for curry stews. Hope this helps.
