When I make a fritata I try to keep the egg shells out but I recycle the
shells in the garden because it keeps the snails out. I've never used
shell fish in fritatas but it could work. I find a hot fire doesn't
work very well for fritatas either. I use a cast iron fry pan and cook
the mixture on the stovetop for about 5 min then finish off in the oven
at 350 F.
