Cheesecake Lollipops
as inspired by Chef David Burks
Make or buy some cheesecakes. If you're making them, don't
worry too much about appearance. Just make sure they're not
undercooked.
Puree the cheesecake in a food processor.
Pipe the cheesecake into truffle sized balls. Chill. Re-roll
them into balls after chilling if necessary. Put a lollipop
stick in each.
Dip them in:
Milk chocolate
Dark chocolate
White chocolate
Caramel
Roll them in:
nuts
coconut
ground heath bar
ground reeses pieces
ground mint candy
Try a multicolored effect. Dip in white chocolate. Let set a bit.
Dip on a bias into dark chocolate. let set a bit. Dip on opposite
bias in milk chocolate.
