Chocolate Mocha Cake
Chocolate Mocha Cake
Ingredients:
3/4 cup whole wheat flour
3/4 cup spelt flour
1/3 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup plain nonfat yogurt
1 cup strong brewed coffee
2 teaspoons vanilla extract
2 tablespoons apple cider vinegar
Preparation:
Preheat oven to 375 degrees F.
Combine all dry ingredients in a mixing bowl. Mix all liquid
ingredients except vinegar and combine with dry ingredients. Pour
batter in non-stick or parchment-lined pan. Pour vinegar over batter
and mix in. Do not worry, your batter should foam. Bake 30 minutes.
Cool and frost with Chocolate Mocha Frosting.
Note: This cake will not rise like a regular cake.
Chocolate Mocha Frosting
Ingredients:
1 pint fat-free sour cream
1/4 to 1/3 cup dry powdered skim milk
1/2 cup cocoa powder
1/2 teaspoon sugar
1 tablespoon instant decaffeinated coffee
Preparation:
Combine all ingredients in a small mixing bowl.
