Steamed Chicken
Steamed Chicken
4-6 boneless chicken breasts
1 medium onion chopped coarsely
2-10 cloves of chopped garlic (or more if you love garlic)
1/2 lemon
2 Tbs chopped parsley
I steam this all together layering the chicken and veggies--squeeze
the lemon over the top and put the lemon in the steamer. No
steamer--well place in a casserole with 1 cup water and microwave 15
min on medium until the chicken is done. Or poach on the stove top
for 20 minutes until chicken is done. Chop the cooled
chicken--discard the veggies and save the broth. use 1/4 of the
chicken for a salad or potato topper adding cheese to taste. use 1/4
of chicken added to 1 package of frozen shopped spinach--thawed and
well drained, add I pkg thawed frozen shopped artichokes, 2 Tbs fat
free sour cream, 1/2 tsp lemon juice. 2 Tbs parmesan cheese and 4 Tbs
grated mozzarella. mix well and spread on pita bread, taco shells
toast in oven until brown or microwave until cheese melts
1/4 chicken with reserved broth and add your favorite veggies--I use
mushrooms a few carrots, celery or add a pack of your favorite frozen
veggies simmer and eat as soup or serve over pasta add a bit of olive
oil with pasta like 1 tsp or to taste
I use the last 1/4 of the chicken chopped with grapes about 1/2 cup, 1
tsp teriyaki sauce, 3 chopped green onion, 1 Tbs mayo, 1 Tbs sour
cream, 1/4 cup chopped carrot and celery and water chestnuts . mix
well and serve as a salad on fresh spinach or greens or spread on a
favorite bread product as a canape or make sandwiches with it
Everyone in my family likes one or more of these uses and there are
many other possibilities but I get several days of low cal eating
without cooking more that one time.Happy eating
