Turkey Pan Stew
Here's the simplest leftover recipe in the world and our dinner
regulars love it! Usually the day after Thanksgiving or
Christmas(we eat turkey then, too) everyboby wants sandwiches or
full plate dinners warmed up in the microwave.
On the second day however, they're ready for something different.
My Dad was anyway, and he created this meal.
Into our largest frying pan we throw in as much left over turkey
(white and dark both) and as much leftover stuffing as will fit
and all the left over gravy (We usually use up everything) and
simmer over medium heat adding as much hot water as necessary to
maintain a stew consistency. (The stuffing absorbs the liquid.)
We warm up the leftover mashed potatoes and vegtables, pull out
the leftover cranberry sauce and serve. Many in our group of
diners plop the "glop" right on top of the potatoes.
Our table enjoyed this so much this year that when we recently
had leftover chicken, they clamored for the same thing!
It doesn't matter how the chicken is cooked. Just strip it off
the bone or separate boneless pieces into strips and do the same
thing by making stove top stuffing and using store bought bottled
gravy. It's not quite as tasty (mainly because we still opt for
stuffing in the turkey during the holidays -none of us ever got
sick!) but we found by adding some sage to the stove top stuffing
the facsimile was still plenty good.
