Default Stuffed Green Peppers

Stuffed Green Peppers - cooked on top of the stove.

4 large Green Peppers
1 lb. lean ground beef
1/2 cup uncooked rice
1 large egg
1/2 teas salt
1 - 12 oz can tomato paste
1 cup water
1 - 48 oz can crushed or diced tomatoes

Cut around stem of Green peppers and remove the seeds and some of the white ribbings
if they are very thick. Set aside. Discard stem & seeds.
In bowl thoroughly mix ground beef, uncooked rice, egg and salt.
Stuff peppers 3/4 full of the ground beef mixture, (if have beef mixture left over
shape into meatballs about golf-ball size).
Place stuffed peppers and meat balls into a large pot with rim at least 2 inches
above tops of peppers.
Mix together tomato paste, water and crushed tomatoes. Pour over stuffed peppers.
Cook on top of stove, over medium heat, bring to boil. Cover with lid. Turn heat to
low and simmer for about an hour and a half or until you can see the rice is done and
fork inserted into center of pepper's opening goes in easily. You can also make
these in a crock-pot.
