Electric skillets do an excellent job of poaching fish. Just set the cooking
temperature for the final temperature that you want the fish to be, and the
fish will never get overcooked. (Tip courtesy of the "Good Eats" episode on
poaching. I tried it last Christmas Eve and it works.)
