I agree that some of the information is more than I need to know, but
it doesn't hurt. Heaven knows there are plenty of "why does X do Y?"
questions *here*. When Alton says "a souffle falls because...," I
listen. When he illustrates different kinds of fats with a toy train,
it sticks(!) in my mind longer than reading a page of print. I'm
probably not going to ever smoke my own bacon, so I'll skip repeats of
the junkyard competition show, but the chocolate chip cookie one is
worth making notes from.
