Tom's Smokey Grilled Summer Squash

2 Zuchini
2 Yellow squash
1/2 onion diced finely
1 yellow pepper chopped fine
1 cup of dried crushed corn bread
2 cloves of garlic crushed
Salt pepper to taste
Extra Virgin Olive Oil (I like Ravida)
1/2 tsp thyme dried (1 1/2 fresh)
While you are preparing this light your grill and start soaking your
wood chunks for smoke. I use misquite.
Slice the squash and zuchini lenthwise. Use a teaspoon and hollow out
the inside leaving a shell about 1/8-1/4 inch thick. Set interior
aside.
In skillet with 2 teaspoons olive oil begin browning the onion,
garlic, pepper and thyme. Once it starts to carmelize add the zuchini
and squash. Cook till slightly tender. Set in bowl and add dried corn
bread and mix thouroughly. Add salt and pepper to taste.
Coat outside of zuchini and squash with olive oil and set on the grill
burners until very shightly brown. Remove from heat.
Spoon the veggie/cornbread misture into the shells.
Add wood chips to fire to make smoke.
Cook over cool part of fire or on indirect heat with smoke chips for
10-20 minutes until soft and cornbread mixture is slightly brown.
Serve.
