Callebaut has literally hundreds of formulations, each aimed at a slightly
different application. And in fact the exact formulations are changing from
year to year.

However, the 54% you're referring to (probably "835" - Callebaut likes to
refer to chocolate formulations by a somewhat cryptic number) is quite
possibly the best sweet dark chocolate available. I wouldn't hesitate to
buy it. You'll want 835-NV - the natural vanilla version, for the very best
taste.
