They have 53.8 - 54.5 - 60.3 and a 70.4% and milk chocolate and white
chocolate- Hazelnut - Orange (my favorite along with the 70.4%) and
probably a few more I haven't heard of. The 53 thru 60% ones I use for
baking. Patisfrance also works well and its cheaper But great
flavor.Or you can go highend and get Valrhona. Check out your local
resturant supply co. 11lbs should run you about $35 to $65 depending
on which Callebaut you choose. 835- 54.5% ran me $44. Works for me.
