Hi Sue,

That's because the food at the Met is run by Restaurant Associates. I have
the pleasure of eating in a cafeteria that RA runs every workday. Many
chefs with culinary degrees.

A month ago they took over the food at The Brooklyn Museum. The difference
was quite noticeable at the last opening.
