I, as a Japanese, feel it a quite interesting understanding. The English
term "sushi" means "Edomae-zushi", "Nigiri-zushi". Its originated
ralatively recent, in Edo-era. Initially, "sushi" was a fast food like
McDonald hanburger or hot-dog. No conservative Japanese restaurant in Kyoto
serve "suishi" as formal presentation.
