Parmesan Potato Wedges
Ingredients:
Three medium potatoes, peeled
1/4 cup grated Parmesan cheese
1 red bell pepper
1 green bell pepper
Olive Oil
Cut the potatoes into 1-inch wedges; coat with olive oil. Sprinkle
with the Parmesan cheese; toss and place on a nonstick baking
sheet. Roast the potatoes for 15 minutes. Meanwhile, seed and
cut one each medium red and green bell peppers into 1-inch
strips and toss in a bowl with 1 teaspoon olive oil. Add these to
the partially cooked potato wedges. Roast an additional 10 to15
minutes, or until both the potatoes and peppers are tender.
