I make lasagne using a rich homemade meat sauce that includes lean
ground beef, tomatoes, tomato paste, onions, fresh sliced mushrooms,
green pepper, celery, fresh garlic, fresh parsley, and spices. Today I
did a small lasagne session to make up a few trays for the freezer. The
tomatoes and paste were canned a couple of months ago. Cheeses were -
motzarella, medium cheddar, extra old cheddar, fresh parmesan, harvarti,
& cottage. All cheeses are shredded and blended prior to assembling the
lasagne with the exception of the parmesan that is grated as needed and
the cottage that is spooned onto the layers as needed. We like spinach
in our lasagne too.
