I made a beef stew this afternoon, but it is for dinner tomorrow. I think
that stew tastes a heck of a lot better the next day. I always brown the
beef, take it out and then sweat onion, carrots, celery, mushrooms and
garlic, then add wine and broth and thicken the sauce with Veloutine. Then
I toss the meat back in and simmer it for an hour or two. The next day I
heat it up, toss in potatoes and carrot and stick it in the oven. About 10
minutes before serving I toss in some corn and peas.
