Peameal bacon is sweet cured pork loin originally rolled in peameal
hence the name. The coating is now more commonly corn meal. I posted
links to pics of my first peameal bacon experiment using pork
tenderloin. I used the tenderloin because it was really, really cheap
and it was my first attempt at curing meat. I will be posting a pick of
homemade peameal bacon shortly. I started the curing process last
Saturday so it is pretty much ready to use except I haven't put the
cornmeal coating on it yet.
