If you purchase a pork loin,(boneless) it will come entirely from
outside of the rib cage.Pork chops are simply the loin cut into slices
with the bones (ribs) attached.
The reason the tenderloin is so tender is that it does absolutely no
work being located along the spinal column, inside the rib cage. I
have removed dozens of tenderloins from pigs, deer and cows.
