Quick Loaded Baked Potato Soup
2 lb. bag of hash brown potatoes
1 stick butter
2 cup chicken broth
1 quart half and half
2 cup milk, mixed with 1/3 cup flour
1 pkg. Oscar Mayer bacon bits
2 green onions, sliced thinly (Tops and all)
Salt and pepper to taste
Additional bacon bits and shredded cheddar cheese for garnish
In a large soup pot, bring chicken broth and butter to a boil. Add hash
browns and cover. Steam and cook until potatoes are done, 10 minutes or
so. Add half and half and milk and flour mixture. Cook until mixture
comes to a boil. Add bacon bits and sliced onion. Reduce heat and let
simmer for 20-30 minutes. Salt and pepper to taste before serving. Serve
with bacon and cheese garnish.
