I have begun this "work" of sourdough because it intrigue me too!
They have told me sourdough is better when is old and has many refreshments.
Today I will do another refreshment to the one I have in the fridge.
But it is a lot of sourdough, so I will keep only 100 gr. and I will use the
other to make a pizza.
I will do refreshments once in a week. This is the only work I will have to
do.
