I make a rendition of the Paul Prudhomme recipe..If you don't find what
you want..will be glad to post.

I use a Coleman stove. We have a gas grill but you can super heat the
cast iron with the Coleman and have better control..you need a white ash
hot skillet.. cast iron is tough stuff, don't think you can hurt it. I
think they actually like to be used for this dish. <g>

Catfish work great as does salmon.
