Default Country style pork ribs, best wau to cook?

I use country style ribs to make quick and easy carnitas and chile verde. For
the carnitas I marinate them overnight in orange juice, garlic, onions, olive
oil, salt and pepper. Then slow cook them in a low oven (cover pan with foil)
until they are tender, then uncover and up the heat to crisp. Shred for tacos
or burritos.

Short Cut Chile Verde - cut into small cubes and brown in bacon fat. Remove and
cook onions and garlic in the drippings until they are softened. Add green
chili sauce (I use Frontera brand) and braise for an hour or until the pork is
fork tender. Serve over Mexican Rice.
