Bamboo shoots would be okay with the pork, but I don't think that canned
mushrooms or teriyaki would go very well.
Rather than the suggested fried rice, I'd consider making some kind of
stuffed-dough thing with the pork. There are lots of different directions
this can take: You can use soaked rice paper wrappers and make summer rolls
(though you probably don't have the ingredients for that). You can make
biscuit dough, encase the pork, and bake. You can make bread dough, encase
the pork, and bake or steam. You can use puff pastry or phyllo dough. You
can use refrigerated croissant dough-in-a-tube.
Alternatively, you can add the pork to egg foo yung.
In any of those cases, you can add the bamboo shoots or leave them out. Do
you have any canned pineapple? That would go well with the pork too.
