Instants have their uses. Often, it's to absorb excess liquid or add
texture. I've seen a number of recipes that call for potato
flakes/instant mashed potato. They're supposed to be good in bread, or
potato casserole/pudding, etc. I suppose instant grits would have a
use similar to that.
