I believe this is an Emeril Legasse recipe:
Jicama Orange Salad
2 cups peeled jicama, cut into 1/2-inch dice
2 seedless oranges, peeled and cut into sections (about 1 cup)
2 tablespoons freshly squeezed orange juice
1/4 cup finely chopped red onion
3 tablespoons finely chopped red bell pepper
3 tablespoons chopped fresh cilantro
1/2 teaspoon salt
freshly ground pepper
Combine all ingredients in a bowl and toss until thoroughly blended. This
can be made a day ahead and stored in the refrigerator in an airtight
container.
