Kits? Kraft Dinner is kit. El Paso Taco dinner kits are kids. This is a
different type of gimmick. The OP and someone else painted slightly
different pictures. The OP said that you do the slicing, dicing, chopping
and assembly. Someone who had been to one, or one like it, said that the
stuff is pre chopped, like a work station. What you end up with is a
packaged entree ready to be heated up for dinner or frozen for later, but
you had to make it yourself.

Perhaps not, but it sure looks like a dumb idea to me. I can't imagine
using the service myself and I can't imagine who would.

The OP suggested a cost of $120 for six entrees. I would do it for that. I
would do it for less than that. I am not a professional cook, but that
shouldn't be an issue for something that is going to be packed away and
eaten later. I know lots of people who are professional chefs. Based on
what they are paid at their restaurants it would likely mean a more
profitable hour or two of work than their regular jobs.
