Brazilian Black Beans

1 1/2 cups black beans -- uncooked
4 cups water
1 clove garlic -- minced
1 small onion -- peeled and stuck with
3 whole cloves
1/2 teaspoon salt -- (recipe calls for "lite salt"; I used
regular)
1 tablespoon oil
1 cup chopped onion
1 green pepper -- chopped
Soak beans overnight.
The next day, bring beans to boil and then reduce heat to moderate.
Cook for 1 hour. Add garlic and clove-studded onion and lite salt and
cook for 1 hour longer.
Or, if using a pressure cooker, cook beans, garlic and onions and lite
salt (without prior soaking) for 15 minutes (I added the salt in the
next step). Reduce pressure slowly.
Beans should be tender but not mushy. Saute chopped onion and green
pepper in oil briefly.
Remove whole onion with cloves from beans and discard. Add the
sauteed onions and green pepper to the beans.
Stir and cook a few minutes to blend flavors.
