Living in Central America - Honduras - I see pelnty of sardines, but
they are all canned. However....at this time of the year, Easter Holy
Week, Semana Santa, dried fish is all over the place - in the local
outdoor markets, in the regular grocery stores, etc. Dried fish seems
to be specific to Semana Santa (along with an abundance of fresh
fish). I have no idea what they do with the dried stuff other than
possibly soak it to remove the salt and then use it in fish or seafood
soups.
