Sure.
Chop it. Throw into a plastic bag and put it in the freezer. It will be fine. Last
spring I picked up some rhubarb on the way home and made a pie. My wife arrived
home with another bunch of the stuff. I froze and used it for a pie in the middle
of winter. It was great.
