What are your favorite cookbooks? "The Joy of Cooking", "The Way to Cook"?

Not necessarily my favourite but a very good one is "How to Cook and
Eat in Chinese" by Buwei Yang Chao.
It is a bit like the JOC for Chinese cooking.
