I seriously doubt that the noodles the restaurant orders from Thailand
are FRESH in any way. You think they charter a SST to bring the
goodies for a $3 dish? And you couldn't distinguish the fresh from the
dried anyway, after cooking. There are lots of other kinds of noodles,
such as the chow fun noodles you mention that can be found fresh at
Asian markets. Actually, chow fun noodles would probably be your best
bet. You can often buy them in big sheets, which would let you cut
them to the width you like. No way will you find them in a roundeye
supermarket. -aem
