The even heating thing is where I might find it useful. I've got a flat-top
electric stove (it came with the house...) and on the lower settings, it
doesn't go to a lower heat, it turns on and off and on and off. Which is
fine for some things, and some pans, but I'd rather be able to just adjust
the heat and have it stay there.
