But watch him try to form ravioli, or make equal size meatballs. How many
times have you seen him "demonstrate" a task that takes manual dexterity,
then place his messy product on a tray of perfectly formed, uniform examples
made by his staff in the back? Also, his knife skills, or lack of them, make
it clear that he missed the prep-station in his education and experience. I
think that Commander's Palace chose him for his executive skills, not his
cooking finesse.
