Default Copper River Salmon

I neglected to include the other name for Red Salmon which is SOCKEYE
SALMON ! I would also like to reference here Gunner's excellent post.
The number of his post in this same thread is # 37. He had some great
points about the marketing claims made by the fish industry. It is
true that gill netters do not fish up in the river. They often do
however, fish near the mouth of the river because they know that's
where the fish in that part of the ocean are headed for, to swim
upstream. The gill-netters nab them before they can do that. As for
how fresh fish are, it really varies. If you were to stand on the dock
for a whole season you would see boats come in where real professionals
care deeply about the quality of their fish. Their fish would be
methodically iced down. Some of these boats may even have chillers on
board to keep the fish fresh. You will also see fish come in that have
had little attention paid to keeping them fresh. You will see boats
that have come from a long way out and boats that fish near. So the
fish the canneries buy really vary in freshness. The canneries also
vary in how quickly they can get to the fish they've bought and held
either in chilling tanks (tanks filled with sub freezing brine water)
or iced down in big stainless steel containers. The bottom line though
is that the cannery knows that fresh market fish have to be of a
certain freshness.
The quality control staff have a number of indicators of freshness
(including smelling various parts of the fish ! ! ! ). The freshest
fish are iced down and shipped ASP . The next freshest fish are
frozen. If the fish doesn't pass muster at either of these places it
is canned because you won't generally taste the difference once the can
is run through the steamers.

Personally, I love salmon! Frozen salmon it is never quite as good as
the same variety fresh. But if that was all that was available would I
eat it? You Betcha! Salmon is great even canned ! But for a mouth
watering treat with full flavor and moisture that just melts in your
mouth go out and get a fresh salmon that's never been frozen and even
if you put nothing on it and just cook it -
you will be in for a treat ! If you love salmon, make sure you
experience this someday.

I also wanted to thank all of you who contributed. It was nice
reminiscing about working my way through college in the early eighties
by working in the salmon canneries in the beautiful state of Alaska.
Among all the areas of Alaska the Copper River is one of the most
beautiful. I'm married now and can't wait to bring my family up there.
