Peach and Pepper Relish

Amount Measure Ingredient Preparation Method
2 large ripe peaches pitted and diced
1/4 cup minced red bell pepper
2 Tbsp. seeded and minced fresh jalapeño chiles
1/4 cup minced green onion
1/4 cup minced parsley
2 Tbsp. minced cilantro
1 Tbsp. olive oil
1 Tbsp. lime juice
1 Tbsp. honey
Salt and pepper to taste


Combine all ingredients in a large bowl. Cover and refrigerate 30
minutes. Serves 12.
