Smoked Turkey Grape Dijon Salad

Ingredients:
3 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons minced onion
1 tablespoon Dijon mustard
1 clove garlic, minced
3 cups hot cooked brown rice
1/3 pound smoked turkey breast, cut into thin strips
1 cup red or green seedless grapes, halved
3/4 cup thinly sliced green onions
1/2 cup chopped pecans, toasted
Lettuce leaves
Directions:
Combine oil, juice, onion, mustard and garlic in small bowl; set
aside. Combine rice, turkey, grapes, onions, pecans, salt and pepper
in large bowl. Pour dressing over salad. Toss to coat, serve over
lettuce leaves. Makes 6 servings
