I think the dumplings you are referring to have had a gelled substance
(broth, etc.) put into the dumpling (as opposed to iced) and when the
dumpling is heated, the gelled broth turns into soup. I have a recipe
somewhere in the house, but unfortunately it's not already on my computer.
You could try to Google "Chinese soup dumpling" and I think you would find a
few recipes for it, and of course perhaps someone here will post a recipe
for it after seeing your question.
