When I worked at Taco Hell yonks ago, we had something like a
wall-mounted vegomatic-- it looked something like those wall mounted can
crushers, but with interchangeable blades (I think the one we used for
tomatoes was about 1/2 inch, and the ones for onions maybe 1/4 inch).
