I generally just go straight for the armadillo eggs....

Jalapenos de-ribbed and seeded, stuffed with a mix of cheddar and cream
cheese. Close back up and wrap with a strip of bacon, secure with a
toothpick.

Grill until the bacon is done.

Wear gloves for preparation or you may regret it if you need to use the
restroom. <G>
