Rice Pudding and Carrot Pudding

Here are recipes for rice and carrot pudding from my recipe book. its
simple and fast and easy.

Simply Indian: Carrot Pudding
Ingredients:
Carrots........................................... ............................8-10
medium sized
Raisins........................................... .............................3
tbsps
Cashewnuts........................................ .......................12-15
Unsalted Butter............................................ ...........1/3
cup
Whole Milk.............................................. ..................1
1/2 cups
Green cardamom powder.....................................1 tsp
Sweetened condensed milk................................1 can
Method of preparation:
.. Wash, peel and grate carrots.
.. Melt butter in a large pan over medium-high heat. Let the butter
heat up for 2 minutes after it has melted. You may want to scrape the
foam on the top of the butter using a spoon. This is a process to
clarify butter and turn it to ghee. It has a different aroma than
butter and is extensively used in Indian cooking.
.. Add carrots to the butter and saute for about 8-10 minutes.
.. Add cardamom powder and milk. Cook uncovered until milk evaporates
and the carrots are cooked. This may take about 30-45 minutes over
medium-high heat.
.. Add sweetened condensed milk, raisins and cashews and cook for
another 5 minutes.
.. Serve hot or at room temperature.

Ingredients:
Basmati Rice.............................................. ...............1/2
cup
Raisins........................................... .............................6-8
Almonds........................................... ..........................6-8
Pistachios........................................ ..........................6-8
Whole Milk.............................................. .................3
cups
Green cardamom powder.....................................1/2 tsp
Sweetened condensed milk................................1 can
Method of preparation:
.. Wash rice 3 times in cold water. Then, soak the rice in 1 cup of
water for 15 minutes.
.. Slice almonds and pistachios.
.. Heat milk in a thick-bottomed pan and it to a boil. Add rice and
cook until rice is nearly done.
.. Add sweetened condensed milk, almonds, pistachios, cardamom powder
and raisins and cook for another 5 minutes.
.. Serve hot or cold.
