Rocky Road Clusters
makes about 2 dozen pieces,
This candy is just like rocky road fudge without the hassle.
2 Cups (12 oz package) semi-sweet chocolate chips (or substitute with fine
semi-sweet chocolate chopped)
1 1/4 cups (14 oz. can) sweetened condensed milk
2 1/2 cups miniature marshmallows
1 cup coarsely chopped nuts
1 teaspoon vanilla extract
Line baking sheets with waxed paper
Combine chocolate chips and sweetened condensed milk in large, microwave-safe
bowl. Microwave on HIGH (100%) power for 1 minute; stir. Microwave at
additional 10-20 second intervals, stirring until smooth. Stir in
marshmallows, nuts and vanilla extract.Drop by heaping tablespoons in mounds
onto prepared baking sheets. Refrigerate until firm.
NOTE: By omitting the vanilla extract the flavor of the chocolate will be more
like that of dark chocolate.
