REC: Chocolate-Chocolate Chip "Cheater" Cookies
I was in a pinch for a quick dessert to take to a function, and made
these on a whim. I improvised from a recipe in a Better Homes and
Gardens cookie book. The cookies are delightlfully crisp on the outside
and chewy on the inside. They were snarfed up right away.
Chocolate-Chocolate Chip "Cheater" Cookies
1 package Betty Crocker brand Super Moist Devil's Food cake mix
1/2 c. butter, melted
2 X-large eggs
8 oz. chocolate chips or chunks
Preheat oven to 350F. Grease cookie sheet
Beat eggs until homogenous, set aside
Mix melted butter into cake mix by hand, and when fairly well
incorporated, add eggs. Mix by hand until homogenous. Fold in
chocolate chips/chunks. Batter will be fairly sticky and shiny. Make
balls with dough, using approx 1 heaping teaspoon per cookie. Flatten
and place on cookie sheet. Bake approx 10-12 minutes until cookies
start to flatten and crack. Cool on wire rack, and store in an
airtight container.
