So here';s my question.

I LOVE making homemade aioli - basic stick-blender mayo with 4 clvoed
of roasted garlic whizzed in - but I know how high=fat it is.

When I buy commercial mayo, I like Hellmans (Best Foods) lowfat - used
to be called Just 2 good but now it's called lowfat I believe. not
light mayo, but reduced fat. Only 2 grams in a tablespoon, I believe
largely due to the amount of water that's added. Is rthere any way to
reduce the fat in homemade mayo? Or do I just have to stick to eating
it when i'm willing to indulge a little?

I LOVE using my aioli on (soy) bacon /avocado / lettuce / tomato
sandwiches on whole-grain toast. one of my favorite treats for lunch.
We also use it with steamed veggies, esp. artichokes or asparagus.
